  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 4 bell peppers (sliced; vary the colors to make it pretty!)
  • 1 small onion (sliced)
  • 1 recipe or package fajita seasoning mix (taco seasoning may also be used)
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • 2 cups cheddar cheese (grated)

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet over medium heat, add olive oil. Once hot, sauté the chicken pieces until cooked through; remove and set aside.
  3. In the same skillet, sauté sliced onions and bell peppers until tender.
  4. Return the chicken to the skillet, adding fajita seasoning mix, sour cream, and softened cream cheese. Mix well.
  5. Transfer the mixture into an oven-safe baking dish and sprinkle with grated cheddar cheese.
  6. Bake for 10-15 minutes until cheese is melted and bubbly.
