  • 4 tablespoons extra-virgin olive oil, divided
  • 2 oz mozzarella cheese, shredded (about 1/2 cup)
  • 1 oz Parmesan cheese, finely shredded (about 1/2 cup)
  • 2 tablespoons fresh basil, torn

Instructions

  1. Slice zucchinis in half lengthwise to create steaks. Score the flesh side in a crosshatch pattern and season with salt; let sit for 15 minutes.
  2. In a skillet over medium heat, combine minced garlic, red pepper flakes, and 2 tablespoons olive oil; cook until fragrant (about 1-2 minutes) and transfer to a bowl.
  3. Heat remaining olive oil in the skillet, pat zucchinis dry, then sear each half flesh side down until golden brown (about 2-3 minutes). Transfer to a baking sheet.
