  • 1 ½ cups low-carb pulled beef
  • 2 heads cauliflower (about 700 grams)
  • Olive oil
  • Salt and pepper
  • 2 small tomatoes (chopped)
  • 1 medium green bell pepper (chopped)
  • 2 green chilies or jalapeños (sliced)
  • 2 teaspoons low-carb taco seasoning
  • ½ cup Parmesan cheese
  • 1 cup freshly grated mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread cauliflower florets on the baking sheet, brush with olive oil, and season with taco seasoning, salt, and pepper.
  3. Roast cauliflower for 5–7 minutes until tender but not browned.
