  • 5 cups chopped green cabbage
  • 5 cups beef stock
  • 1 cup riced cauliflower
  • 1/2 cup diced carrots
  • 1.5 teaspoons table salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot over medium-high heat, brown the ground beef and diced carrots for about 5 minutes using a stiff utensil.
  2. Add the diced tomatoes (with liquid), chopped cabbage, beef stock, riced cauliflower, salt, oregano, and thyme to the pot. Stir for one minute.
  3. Bring the mixture to a simmer. Cover and reduce heat to medium-low, allowing it to simmer until the cabbage is tender, approximately 30 minutes.
  4. Stir well before serving hot, garnished with fresh parsley.
