  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp dried thyme
  • 1 lb pasta (your choice)
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet. Drizzle with olive oil and season with salt, pepper, and thyme.
  3. Bake for 20 minutes until veggies are tender.
  4. Cook the pasta according to package instructions; reserve 1/3 cup of pasta water before draining.
  5. Blend the roasted vegetables with the reserved pasta water until smooth.
  6. Toss the sauce with cooked pasta until evenly coated.
