  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt the vegan butter in a large pot over medium heat.
  2. Sauté the chopped onions and garlic for about 5–7 minutes until soft.
  3. Stir in the flour to create a roux.
  4. Gradually whisk in the vegetable broth and rice milk until smooth.
  5. Bring to a boil while stirring occasionally.
  6. Add broccoli and carrots; cook for about 10 minutes until tender.
  7. Incorporate the vegan cheddar cheese and stir until melted.
  8. Blend about a quarter of the soup in a high-speed blender until creamy, then return it to the pot.
  9. Season with salt and pepper to taste before serving.
