Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 3/4 cups buttermilk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • Vegetable oil, for greasing the waffle iron
  • 2 cups powdered sugar
  • 1/4 cup milk (or more, as needed)
  • 1 teaspoon vanilla extract (for glaze)
  • 1/4 teaspoon ground cinnamon (optional)
  • Chopped nuts (pecans, walnuts)
  • Sprinkles
  • Caramel sauce

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well mixed.
  2. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until combined.
  3. Gradually pour the wet ingredients into the dry ingredients while whisking gently. Mix until just combined; do not overmix—it's okay if there are some lumps.
  4. Gently fold in the diced apples using a spatula or wooden spoon until they are evenly distributed throughout the batter.
  5. Let the batter rest for about 10-15 minutes (optional).
  6. Preheat your waffle iron according to the manufacturer's instructions.
  7. Lightly grease both sides of your preheated waffle iron with vegetable oil.
  8. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron.
  9. Close the waffle iron gently and cook for about 3-5 minutes until golden brown.
  10. Carefully remove the cooked waffles and let them cool slightly on a wire rack.
  11. In a medium bowl, whisk together powdered sugar, milk, vanilla extract, and optional cinnamon until smooth.
  12. Adjust glaze consistency with more milk if needed.
  13. Dip each cooled waffle donut into the glaze so it's evenly coated on top.
  14. Sprinkle with chopped nuts or sprinkles, or drizzle caramel sauce over them if desired.
  15. Let the glaze set slightly before serving.
  16. Serve these delightful apple fritter waffle donuts warm or at room temperature.
