  • 1 lb ground chicken
  • 1 egg
  • 1/2 yellow onion, diced
  • 1/2 Granny Smith apple, diced
  • 2 oz cheddar cheese, grated
  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 1/2 cup fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 inch piece of ginger, grated
  • 1 tsp salt
  • Freshly cracked black pepper and cayenne to taste
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1/2 tsp each: cinnamon, coriander, cumin, and nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake sweet potatoes until tender (60–75 minutes). Allow to cool before peeling.
  3. In a sauté pan, heat olive oil and cook diced onion and apple until softened.
  4. In a bowl, mix ground chicken, egg, breadcrumbs, cheese, walnuts, ginger, salt, pepper, and the cooled onion/apple mixture.
  5. Form into meatballs and place on a greased baking sheet. Bake for 15 minutes.
  6. Mash the baked sweet potato with butter, maple syrup, and spices until smooth. Serve alongside meatballs.
